Okay, I admit, I am a bit late in the discussion....
As far as I understand the rules (English version), Damage in Close Combat is handled exactly the same way as with every other type of damage. Your attack has a damage group (6 for Unarmed, for example), so your Injury Roll is made according to that damage group, modified by your specializations, if any.
The results will then be handled just as with firearms.
The maximum wound level for damage group 6 is Critical (20+), but, as the rules state, on a head hit, the wound level is raised by one step. There is nowhere any mention, that this may not raise the wound level beyond the maximum given in the damage group. The next step from critical is deadly, so yes, an unarmed attack with an injury roll of 20+ to the head will be deadly. But you won´t die from being beaten with a riding crop - apart from probably bleeding to death...
On Bloodloss: Once your bloodloss reaches twice your Constitution attribute, you are dead.
As far as bloodloss is concerned, the game does not take the cause of the wound into account - so a wound from a fist blow to the body will cause as much bleeding as a knife stab on the same wound level. But you can always argue, that this has been accounted for by the varying damage groups.
